Top 5 Vegetarian Alternatives for Thanksgiving

It's Thanksgiving again. Don't know what to serve to your vegetarian friends? Visiting your brother and want to bring your own vegetarian dish? Here is my top 5 list of no-meat alternatives for Thanksgiving. Pass the potatoes.

1Vegetarian Lasagna

Everyone wants a serving of my mom's veggie lasagna. Almost every Thanksgiving, my Mom makes a tasty lasagna dish for me. I have included an easy lasagna recipe here. If you are more daring, there are a number of other lasagna recipes at the epicurious.com website - including a wild mushroom lasagna and a butternut squash and hazelnut lasagna.

2Cheese Enchiladas

Whenever I visit my mother-in-law on Thanksgiving, she makes Mexican food. I think she thinks because my family doesn't eat meat, we also don't eat mashed potatoes, yams, veggie stuffing, cranberry sauce, salad and pumpkin pie - - and these foods are the best part of Thanksgiving. Anyway, my mother-in-law's cheese enchiladas are GREAT. And they make a very nice dish to compliment all the rest of the Thanksgiving fixings. I don't have her recipe, but I've included another one that looks delicious.

3Huge Protein-filled Salad

Every year, my sister-in-law asks me to make my "big" salad. It has organic greens, garbanzo beans, glazed pecans, mandarin orange slices, avocado, grated carrots, tomatoes, and small cubes of baked terriyaki tofu. My family, even the big meat eaters, can't get enough of the stuff. I usually toss the salad with Newman's ranch dressing. For vegans, a nice balsamic vinaigrette would work well, too.

4Mac 'N Cheese

My daughter and son love Mac 'N Cheese any time and any day. 99 out of 100 people love Mac 'N Cheese. It works. If you make Annies, you won't have to worry about preservatives and artificial coloring, and tastes yummy.

5Tofurkey

If you need something that sort of resembles turkey to make your Thanksgiving dinner complete, you can try Tofurkey. My experiences with tofukey have been mixed, but on the whole it makes an interesting dish, although a little too salty for my taste. My daughter loves tofurkey. You can find it at most grocery stores.
